Nitakshi was born out of curiosity, concern, and deep research into what we consume every day.
Both founders came from different professional backgrounds, yet one question remained constant in daily life — “The oil we use every day, what exactly is it made of and how is it produced?” People often say, “Village oil is the best.” To truly understand this belief, we traveled to our village and closely observed how oil was traditionally made.

What we discovered was eye-opening. Even in villages, most oils were being produced using oil expellers that operate at high heat, resulting in a burnt, smoky smell that overpowered the natural aroma of the seeds.To verify whether authentic cold-pressed oil still existed, we traveled across different parts of India and visited multiple units claiming to produce cold-pressed oils.

We found that nearly 95% of so-called cold-pressed oils were actually hot-pressed, and in some cases, chemically processed to increase yield.

During deeper research, we uncovered the true meaning of “Kacchi Ghani,” which refers to true cold pressing — a slow extraction process that preserves nutrition and aroma. Authentic cold pressing is only possible using a traditional wooden churner operated at low RPM, where minimal heat is generated.

The label says "cold pressed." The bottle shows a golden farm. Inside? Oil extracted at 180°C with hexane solvent, then bleached and deodorised to erase the evidence. Most Indian families have been deceived for decades.

FSSAI permits oils extracted at up to 120°C to be labelled "cold pressed." We press at ambient temperature — no heat generated at all. We publish temperature logs for every batch.
